Our friend and chef Matthias Speybrouck wanted to create a space that represents his style of cooking called rough and refined. The bases of the project is an 18th century building that oozes history and depth. We didnt add much. Just enough the make sure the building and the food comes first. The copper structure hanging from the ceiling creates another layer of detail above everyones head, just to make them remember the space more clearly. We must have done something right, since this project just won a design award 7 years after opening.
